Autumn is officially here, and it is time to enjoy pumpkin everything–well, almost.  Pumpkin is high in vitamin A, fiber, potassium, and many other vitamins and nutrients.  Vitamin A is good for your eyes, fiber is helpful for digestion, and potassium is essential for your heart.  

Here are seven pumpkin recipes that you will love.  Plus, they are healthy and do not contain refined sugar.  

Turkey Pumpkin Chili

While turkey and pumpkin may sound like an odd combination, this turkey chili was a favorite with my family last fall and winter.  I must confess that I did not add the cinnamon to the chili.  However, our family loved this recipe, and the recipe will be used this year again–more than once!

Autumn Roasted Veggies

This is a perfect prep-ahead meal for a busy day.  The vegetables will roast while you set the table and prepare for your meal.  You can use leftover meat as the protein or put some meat in the crockpot in the morning for an effortless, healthy, and delicious dinner.

While this recipe does not call for pumpkin, it has acorn squash in it.  Feel free to add pumpkin or substitute it for acorn squash.

Here is another delicious way to eat roasted pumpkin.  In this recipe, I would use avocado, coconut, or olive oil instead of cooking spray.

This is a perfect recipe for a chilly autumn day because it takes a while to cook.  Please do not be intimidated by the spices.  I always use what I have on hand.  🙂

Gluten-free Pumpkin Bread

This was made often in our home last year.  It is a super moist and delicious bread made with almond flour and coconut flour.  Since I did not have coconut flour, I just used all almond flour, and it came out great.  I also used olive oil instead of coconut oil.  If there are more than two people in your household, you may want to double this recipe or be ready to bake again quite soon.
